Rise and Shine - Fruity Popcorn Cereal

Ingredients
2 Tablespoons popcorn kernels
1 banana, sliced
2 oz raspberries or other soft fruit
2 teaspoons of light muscovado sugar (optional)
½ pint skimmed milk

Method

  1. Place the popcorn in a non stick pan, with a tight fitting lid and heat for about 5 minutes, or until the popping subsides (Don’t take the lid off until then or you’ll end up with popcorn all over the kitchen!)
  2. Divide the popcorn between 2 bowls. Add the sliced bananas and the raspberries and sprinkle with the sugar, if using. Pour the milk over and eat

Orange and Banana Smoothie

Ingredients
2 ripe, chopped bananas
Juice of 4 oranges
Juice of a lime
1/4 pint of natural yoghurt

Method

  1. Place the bananas in a liquidiser or food processor with a little of the orange and lime juice and blend until smooth
  2. With the motor still running, gradually add the remaining orange, lime juice and the natural yoghurt. Pour into 2 glasses and serve
Tomato Soup Cake - A weird one but Kath our administrator swears it’s delicious.

Ingredients
10oz plain flour
3 tsp baking powder
½ tsp ground cloves
4oz margarine
8 oz sugar
½ tsp cinnamon
½ tsp ground nutmeg
2 eggs
10 oz can of condensed tomato soup
2 x 8" cake tins, floured

Method

  1. Pre heat oven to 375F, 180 C
  2. Sift together the dry ingredients
  3. Add half the tin of tomato soup and the margarine, and beat with an electric mixer for 2 minutes
  4. Add the eggs and the rest of the soup
  5. Beat for a further 2 minutes
  6. Bake for approximately 30 minutes
Frosting

Beat together 6 oz of cream cheese and 8oz of icing sugar and 2 tsp vanilla essence. Spread thickly onto the cake and eat.
