SO there’s nothing in the fridge for tea? Look again - it’s amazing what you can do with a few odds and ends.

Some leftover mince can be made into a cottage pie with a layer of beans (some tins are very cheap) and a topping of mashed potato, decorated with tomato slices, sprinkled with cheese and breadcrumbs and heated in the oven for half an hour or so.

A little bacon or cold ham, cut into strips, along with a chopped tomato, perhaps a couple of mushrooms and/or spring onions, and a couple of ounces of cheese will transform almost any kind of pasta into a delicious main meal. Remember, anything with a cheese sauce will benefit from half a teaspoon of mustard.

A little tin of tuna can go a long way mixed along with a couple of mugfuls of your family’s favourite pasta, boiled in advance. Add a tin of cheap tomatoes, chopped up, and top with some grated cheese. Once you’ve heated it in the oven and melted the topping you will have a very healthy, filling feast.

Omelettes are another way of using up odds and ends. Bits of bacon or cold meat including left over sausage cut small, the odd boiled potato, mushrooms, spring onions (ordinary ones are a bit strong) and of course cheese, all make useful additions in a Spanish omelette (one egg per person).
